Hua Mei are made from yellow ripe plums (commonly known as yellow plums) picked after the Grain Rain Festival. These plums are first washed and then soaked in salt water in a large jar for about a month. After being taken out, they are dried in the sun. After drying, they are rinsed with clean water and dried again. Then, they are pickled with sugar and dried repeatedly in this way. Eventually, they become thick and crisp with moderate sweetness and sourness, known as Hua Mei.
