Ka-ing-tsi is a kind of preserved fruit in the Fujian style, originated from the Xiamen-Zhangzhou-Quanzhou area of Fujian Province. It is characterized by its sweet and fragrant taste with a lingering aftertaste. In 1958, the Fuzhou Preserved Fruit Factory, based on foreign "prune" samples, used local dried plum and white sugar as raw materials, and added precious Chinese medicinal herbs as flavoring agents. The product was made through vacuum concentration boiling, normal pressure conditioning, multiple sugar additions, and multi-step flavoring and aroma blending. Among Fujian preserved fruits, those made from dried plums are generally called ka-ing-tsi, and those with the pits removed are called pit-removed ka-ing-tsi.
